Es bleiben eben lange nachweisbare Rückstände in den Pflanzen. Ob und wenn ja, welche Folgen auf den Organismus diese anorganische Phosphorverbindung haben kann, sollte erforschbar sein.
Beim Wein sind Rückstände im Oktober nachweisbar, wenn Behandlungen noch im Juli stattfinden. Bei Cucurbitae, wo die Ernte viel früher beginnt, wird das noch stärker der Fall sein. Wäre gut zu wissen, was diese Rückstände bewirken können. Optimal wäre die Antwort "Nichts" :-)
Ich habe mal kurz bei der Europäischen Lebensmittelbehörde EFSA nach Stellungnahmen und Bewertungen recherchiert, und zwar zu

Das ist einerseits bemerkenswert, weil Ökowinzer und -bauern lauthals beklagen, dass dieser Stoff im Ökolandbau nicht mehr zugelassen ist, und die Wiederzulassung fordern.
Andererseits muss man dazu sagen, dass diese Einschätzung eher dadurch zustande kommt, dass man angesichts fehlender experimenteller Daten mit sehr vorsichtigen Standardannahmen rechnet, und bei denen kommt eben erstmal raus, dass man nicht automatisch Entwarnung geben kann. Es bedeutet nicht, dass irgendwelche Belege dazu vorlegen, dass Vögel tatsächlich durch das Mittel geschädigt würden.
(Ich kann's mir nicht verkneifen: Bevor nicht der leiseste Zweifel an jeglicher Unschädlichkeit endgültig ausgeräumt ist, soll das Mittel im Ökolandbau eingesetzt werden dürfen??? Da könnte man glatt auf die Idee, das besser untersuchte Glyphosat auch
Oder etwa nicht?)
Was die Toxizität für den Menschen angeht, so zitiere ich mal die Zusammenfassung aus der Bewertung zu Dinatriumphosphonat (in die Daten zu anderen Phosphonaten ink. Fosetyl mit eingingen):
"No data gaps or areas of concern were identified in the area of mammalian toxicology and the risk assessment was finalised...
Disodium phosphonate is not acutely toxic via the oral, dermal or inhalation route. It is not a skin or eye irritant, nor a skin sensitiser. The relevant No Observed Adverse Effect Level (NOAEL) for short-term toxicity is bridged from a study performed with phosphonic acid in rat and is 400 mg/kg bw per day, based on soft faeces, increased water intake, and increased urinary sodium and calcium excretion. The NOAEL for long-term toxicity in dogs is 298 mg/kg bw per day based on testes changes (study with fosetyl-Al) and is 390 mg/kg bw per day in rats (combined sexes) based on clinical findings and reduced body weight (study with monosodium phosphonate). Disodium phosphonate is considered not to have genotoxic or carcinogenic potential. Disodium phosphonate did not show any reproductive potential (the relevant maternal NOAEL being >1782 mg/kg bw per day and the offspring and reproductive NOAELs being >1997 mg/kg bw per day, in a study with fosetyl-Al). In developmental toxicity studies the relevant maternal and developmental NOAELs are 275 mg/kg bw per day (rabbit).
The Acceptable Daily Intake (ADI), expressed as phosphonic acid, is 2.25 mg/kg bw per day based on the 2-year rat study with monosodium phosphonate, and applying an uncertainty factor (UF) of 100 (EFSA, 2005). The Acceptable Operator Exposure Level (AOEL) for disodium phosphonate is 2 mg/kg bw per day based on the developmental toxicity study in rabbits, applying an UF of 100 and a correction for oral absorption of 70%..."
Und zu Fosetyl:
"Phosphonic acid is the major metabolite in plants and in in vivo experimental studies. Acute toxicity is
low. It is not a skin irritant while it is a slight eye irritant. It does not show any genotoxic potential. An
ADI for the metabolite phosphonic acid was set at 2.25 mg/kg bw per day."
Und weiter:
"The risk assessment demonstrated that consumers, including the most vulnerable ones, are exposed to
residues well below the ADI."
Soweit sich das also auf die Schnelle sagen lässt:
